wow! this is a hard question!
I think it depends on what you think is interesting! For me, I think maybe Vesuvious, in Italy, is the most interesting. this is because of the history of the eruption in 79AD that destroyed Pompeii and Herculaneum the Roman towns where Naples is now! The eruption was huge! and lots of people died in the area, but Plini (a roman citizen) was able to watch and record the eruption so we got one of our first descriptions of Plinian eruptions from him!
